These are my Christmas version of Mary Berry’s famous fork biscuits. These are a really simple treat which are great to make with the kids.
100g of Butter, softened.
50g of Caster sugar.
150g of Self-raising flour.
Pinch of Ginger spice.
2 x Baking Trays, lightly buttered.
Preheat the oven to 180°C fan 160°C/ gas 4.
Beat the sugar and butter together in a bowl and gradually add the flour. Combine the mixture together to form a dough. Split the dough into about 16 balls which are about the size of a walnut. Place the balls well spaced out on the baking trays and with a wet fork, flatten the biscuits.
Bake in the preheated oven for 15 – 20 minutes until they are a very pale golden colour. Lift off the baking tray and leave to cool completely on a wire rack.
Enjoy with a cuppa!
